Your career in a few words: I am former student of the School. Working for a great patisserie like Lenôtre, and then for an artisan bakery, enabled me to acquire experience that forged my expertise.
Why did you choose to teach at the School? I’m a former student of the École de Boulangerie et de Pâtisserie de Paris and now a teacher. I love passing on my know-how to motivated and passionate young people.
Your expertise? It’s this personal know-how – as well as that of my colleagues – that makes the training we give at the School so valuable.
