Jean-Marc Serra
Title : Patisserie teacher
Responsibilities: As a teacher in the School of Bakery and Patisserie, he is specifically in charge of teaching patisserie to young apprentices.
A member of the French “Compagnons du devoir” association of artisans, he uses the experience gained during his “Tour de France” (initiation) to pass the secrets of patisserie on to apprentices. He acquired international experience, as well as knowledge of the hotel and luxury catering business, while working for Sofitel hotel chain. A pastry chef since 2001, with experience working for renowned artisans, he knows the art of making products look attractive.
